How do I adjust the spacing of items in a menu? I don't mean adding a single space or seperator. I mean changing the general spacing.

Sort of like how you might change a text document from single to double spaced.

Try to change the option:
TLB Settings->Metrics->Button margins->Menu item height

This option change the menu item height and as result the spacing between menu items.
