Hello Lazlo. 
The method that worked for me is as follow:
- I chose the folder in which I wanted the file to be saved.
- In this folder I created a blank text file (deleted-emails.txt).
- I opened Mail Monitor, browsed and selected this file as the log.
So far It's been working fine, and hasn't moved from this folder.
