Aha, so that was the problem! Well, I'd already disabled skinning the menu's, because I like my default Windows skin so much... 
I noticed something else while testing things, which might have been mentioned before: if the menu view is set to "Text Menu" all text is black, but when it's set to "Icons with Text" the shortcuts have black text, and the submenu's (folders) have white text.
This does not depend on the skin, since the same happens with the <default> skin... and "Custom menu colors" is not checked...
